“What are you cooking?”

“I’m not exactly sure.”

This has been a popular response of mine. At one point in the kitchen last night, I said I was making sweet potato soup. That definitely changed!

I had an onion, sweet potato, black beans, and carrots on board. My giant bag of quinoa later made an appearance and I opted to make a pot of quinoa and veggies.

I love creating things like this in bulk to eat for multiple meal periods. It was pretty easy to throw together too. I cooked the carrots and onions for decades on lowΒ heatΒ for half an hour or so and seasoned them with dill and pepper.

Meanwhile, the sweet potato was cooking away for an hour in the oven. After everything was cooked, I added all of the veggies to the pot of quinoa. I used curry powder and cinnamon as a secret flavoring tip and loved the combination.

I also cooked a bag of frozen edamame. Yum.

Does anyone not like edamame?

Oh and my dinner last night was anything but normal and planned.

I combined veggies with leftover vindaloo and spiced it up. I also had some fruit and carrots on the side. Sounds good to me!

I’ve learned a valuable lesson in the kitchen- combining a bunch of vegetables and grains always yields to something good.

Clearly I’m a veggie lover. But don’t worry, I didn’t end the day in complete nutrition perfection.

I finally made one of these microwavable made-from-scratch desserts that I loved and would actually serve others! I’ll be sure to post the recipe tomorrow. πŸ˜€

    I am such a veggie lover (I also don’t eat meat)- about 80% of my diet is fruits and veg! Your dinner/lunch looks great- don’t carrots take FOREVER to cook?! Your dessert mug looks awesome too!

  4. Your random soup turned not soup dinner sounds great, cinnamon and curry are two of my favorite spices although I don’t know that I have used them together. Sometimes just tossing a bunch of your favorite veggies together is a great meal!

  9. I do enjoy veggies, but I can’t eat a lot of them because they make my stomach hate me for the rest of the day. A chocolate dessert, on the other hand? I’m definitely down with that!

    And your response is the same as mine when my parents come into the kitchen to see what I’m cooking. Okay, so I guess they have a right since it is their meal and all, but sometimes I just like a little space to do my own thing πŸ™‚

  16. I wish I loved veggies…I like them okay, but I sure don’t crave them the way I crave bread or sweets. That veggie/quinoa dish looks wonderful though πŸ™‚

    Haha so true about throwing a bunch of veggies, grains, and spices together and it always being delicious. Sometimes I wonder if other people would think it’s as good as I do!

  22. When I’m in the mood for veggies, I am a veggie lover. But, sometimes, I see myself doubling up on proteins over the veggies!

    I just love throwing a bunch of wholesome ingredients together and tasting the magic that results! Especially with sweet taters and black beans! I enjoy doing veggies in bulk too for easy use in my salad lunches.

    Yes, I am a huge veggie lover! Always have been and always will be. Sometimes I wonder for me if its because I grew up having a garden in the summer with fresh veggies available.
