Cooking in Bulk

Thanks for all the lovely birthday wishes on yesterday’s post! ๐Ÿ˜€

Last night I noticed I was out of oatmeal, eggs, cereal, and every other breakfast food so I decided to make coconut breakfast quinoa. And lots of it.

Quinoa for breakfast?

Quinoa for breakfast?

  • 1 cup quinoa + 2 cups of water (All cooked in the pot for 15 minutes first)
  • 2 Tbsp chia seeds
  • 1 Tbsp flax + 3 Tbsp water (used in place of eggs)
  • 1 banana (melt for 30 seconds in the microwave)
  • 1 Tbsp coconut extract
  • 1 Tbsp vanilla extract
  • 2 Tbsp cinnamon
  • 1 Tbsp honey + 1 Tbsp all natural sugar (or any sweetener/more honey)
  • 1/2 cup unsweetened coconut flakes

This recipe is super easy. Just cook the 1 cup of quinoa with 2 cups of water in a big pot (bring to a boil and then simmer for 15 minutes). Then add the remaining ingredients to the cooked quinoa, stirring it all together. Feel free to add other ingredients like berries or nuts. Iย refrigerateย mine and heat some up in the morning for breakfast.

I added peanut butter to mine this morning

I added peanut butter to it this AM

Now I’ve got my breakfast for the rest of the week. Success!

Cooking in bulk is my thing right now

Cooking in bulk is the way to go

I made two flavors of spaghetti squash for lunch or dinner this week.

Tomato based like spaghetti

Pesto based with parmezan and red pepper flakes

My bulk meal last week revolved around an eggplant.

I added the eggplant to a bunch of cooked veggies.

I topped it with nutritional yeast for some of my dinners

So my meals have been rather repetitive but the desserts have been on point of course!

  1. so funny because I was just saying how I don’t cook in bulk but should. I guess living alone i kind of just make that one single type dish and call it a day.

  2. The problem I have with cooking in bulk….. I eat the BULK when I cook it! Ah ha ha ha ah! I cook like 15 pounds of spaghetti squash and I seriously go through like 8 pounds in a sitting. It’s nuts but SOOOO delicious – lol! Well, that is, until I get a stomach ache. Whoops!

  3. I have never had quinoa for breakfast but I am sure it’s delicious!

I don’t really cook in bulk…but I probably should. the lemon luna is definitely one of my favorites ๐Ÿ™‚

  5. CultFit says:

Chances of you having some more red velvet cake?!? ๐Ÿ˜‰

  6. Now that I’m cooking for one, my bulk meals last a LOT longer than they used to…not complaining! It’s nice only having to cook once and wash dishes once!

  7. I wish I had your skills with cooking bulk meals. I always start the week deciding with my boyfriend that we’ll be adventurous each day. But then by Wednesday we are so busy that we wish we bulk-cooked! I do enjoy using my crock pot some days. I always get lots of leftovers from there!

I’ve been trying to do more cooking in bulk because I’m so tired of making a lunch every morning! Last week, I made taco soup. This week, I made a quinoa salad. It makes my mornings so much less stressful ๐Ÿ™‚

  9. Abby says:

Ever since I bought Chobani’s new cocoloco product, I’ve been in love with coconut- soo good!! I love the idea of quinoa for breakfast, too. Have a great day Alex!

  10. Soups are perfy. Freezable. Tasty usually hot or cold! My soup this week: 2 heads of broccoli, 1 small sweet potato, chicken stock, garlic, onion. that’s it! Puree! unbelievavly good *salted obvs*

  11. Courtney says:

Yum! I love cooking big pasta dishes in bulk, though they never last long ๐Ÿ˜‰

  12. Love the sound of that coconut quinoa! And I don’t do nearly enough cooking in bulk… I mostly just cook up a single serving of whatever it is that I want to eat since I live alone and don’t want anything to go to waste, but it would sure save me some time if I made bigger dishes.

  13. I love to bake in bulk! I buy a lot of food at Costco, so I usually have enough oatmeal to make 500 batches of cookies.

  14. Anne @ says:

I absolutely cook my lunches in bulk! I make my sammys an salads for the week and don’t have to think twice about it later!

Man now I’m seriously craving spaghetti squash for dinner but am out!

  15. Allie says:

I love cooking in bulk! If it’s there and ready to go, I’ll eat healthy options over non any day of the week. But if daily preparation is required? I get lazy and start eating out–Fine on occasion, but expensive if regular! And can you believe I have yet to try quinoa for breakfast?? I need to get on that.

  16. Brittany says:

Happy belated Birthday!!! 24 has treated me ok so far!! I’m only two months ahead of you though! I love your spur of the moment breakfast creation! Also anything in bulk is the way to go for me!

  17. That quinoa looks awesome!

  18. Carrie says:

Every Sunday, I prep a huge batch of quinoa for the week, which makes it easy to put together healthy lunches. I also roast a ton of sweet potatoes for dinners. ๐Ÿ™‚

  19. bezzymates says:

I really do like cooking big meals in bulk. This gives me leftovers for lunch to add to a salad or just reheat. I find I am eating out less and saving tons of money.

  20. Quinoa for breakfast sounds good!! Definitely something new to try!

  21. Natalie says:

Quinoa for breakfast sounds like an awesome idea, its a good way to get some protein in! Lots of fun toppings on it too. Yum!!

  22. I’m a bulk lunch cooker. Sunday food prep usually equals a lot of salmon an steamed veggies. I need to mix up my breakfasts. I do steel cut oats everyday, I like your quinoa idea ๐Ÿ™‚

  23. Meredith says:

I definitley like cooking in bulk because it reduces dishes, and makes the rest of your meals for the week much easier to prepare! That red velvet cake looks amazing!

  24. moderngirlnutrition says:

I always save a portion of dinner for lunch the next day! our breakfast is genius ๐Ÿ™‚ It looks thick like actual oats- sometimes breakfast quinoa is watery or thin when I make it. Going to try this recipe out ๐Ÿ™‚

  25. moderngirlnutrition says:

  26. I love cooking in bulk, I’ve just been a slacker in that department. Go you! Oh and happy belated bday. I suck >.<

  27. I can’t remember if I said Happy Birthday – Happy Birthday! lol…I don’t love cooking in bulk all of the time because I don’t like getting stuck with something I am not in the mood for. Did you like the quinoa for breakfast? I once made it and didn’t love it as much as oatmeal. Maybe I will try it again.

  28. IRENA says:

Answer: Yes I am, mostly for practical reasons – leftovers are very handy thing for the weeknights I you don’t have time to cook.
You really are a playful cook btw ๐Ÿ˜‰

  29. I would like to first learn how to cook in general… Then maybe I will try my hand at cooking in bulk ๐Ÿ™‚

  30. I love cooking in bulk. And I’m totally bookmarking that breakfast quinoa recipe!

  31. Spaghetti squash…I still need to try that one!

  32. […] yesterday. I was craving vegetables so I added frozen mixed veggies and peanut Thai sauce to my coconut breakfast quinoa. […]
