Last night I noticed I was out of oatmeal, eggs, cereal, and every other breakfast food so I decided to make coconut breakfast quinoa. And lots of it.
Ingredients
- 1 cup quinoa + 2 cups of water (All cooked in the pot for 15 minutes first)
- 2 Tbsp chia seeds
- 1 Tbsp flax + 3 Tbsp water (used in place of eggs)
- 1 banana (melt for 30 seconds in the microwave)
- 1 Tbsp coconut extract
- 1 Tbsp vanilla extract
- 2 Tbsp cinnamon
- 1 Tbsp honey + 1 Tbsp all natural sugar (or any sweetener/more honey)
- 1/2 cup unsweetened coconut flakes
Directions
This recipe is super easy. Just cook the 1 cup of quinoa with 2 cups of water in a big pot (bring to a boil and then simmer for 15 minutes). Then add the remaining ingredients to the cooked quinoa, stirring it all together. Feel free to add other ingredients like berries or nuts. I refrigerate mine and heat some up in the morning for breakfast.
Now I’ve got my breakfast for the rest of the week. Success!
I made two flavors of spaghetti squash for lunch or dinner this week.
My bulk meal last week revolved around an eggplant.
I added the eggplant to a bunch of cooked veggies.
So my meals have been rather repetitive but the desserts have been on point of course!
Question: Are you a fan of cooking big meals in bulk?

so funny because I was just saying how I don’t cook in bulk but should. I guess living alone i kind of just make that one single type dish and call it a day.
The problem I have with cooking in bulk….. I eat the BULK when I cook it! Ah ha ha ha ah! I cook like 15 pounds of spaghetti squash and I seriously go through like 8 pounds in a sitting. It’s nuts but SOOOO delicious – lol! Well, that is, until I get a stomach ache. Whoops!
I have never had quinoa for breakfast but I am sure it’s delicious!
I don’t really cook in bulk…but I probably should. the lemon luna is definitely one of my favorites 🙂

Now that I’m cooking for one, my bulk meals last a LOT longer than they used to…not complaining! It’s nice only having to cook once and wash dishes once!

I wish I had your skills with cooking bulk meals. I always start the week deciding with my boyfriend that we’ll be adventurous each day. But then by Wednesday we are so busy that we wish we bulk-cooked! I do enjoy using my crock pot some days. I always get lots of leftovers from there!
I’ve been trying to do more cooking in bulk because I’m so tired of making a lunch every morning! Last week, I made taco soup. This week, I made a quinoa salad. It makes my mornings so much less stressful 🙂

Soups are perfy. Freezable. Tasty usually hot or cold! My soup this week: 2 heads of broccoli, 1 small sweet potato, chicken stock, garlic, onion. that’s it! Puree! unbelievavly good *salted obvs*

Love the sound of that coconut quinoa! And I don’t do nearly enough cooking in bulk… I mostly just cook up a single serving of whatever it is that I want to eat since I live alone and don’t want anything to go to waste, but it would sure save me some time if I made bigger dishes.
I love to bake in bulk! I buy a lot of food at Costco, so I usually have enough oatmeal to make 500 batches of cookies.
I absolutely cook my lunches in bulk! I make my sammys an salads for the week and don’t have to think twice about it later!
Man now I’m seriously craving spaghetti squash for dinner but am out!
I love cooking in bulk! If it’s there and ready to go, I’ll eat healthy options over non any day of the week. But if daily preparation is required? I get lazy and start eating out–Fine on occasion, but expensive if regular! And can you believe I have yet to try quinoa for breakfast?? I need to get on that.

Every Sunday, I prep a huge batch of quinoa for the week, which makes it easy to put together healthy lunches. I also roast a ton of sweet potatoes for dinners. 🙂
I really do like cooking big meals in bulk. This gives me leftovers for lunch to add to a salad or just reheat. I find I am eating out less and saving tons of money.

I’m a bulk lunch cooker. Sunday food prep usually equals a lot of salmon an steamed veggies. I need to mix up my breakfasts. I do steel cut oats everyday, I like your quinoa idea 🙂
I definitley like cooking in bulk because it reduces dishes, and makes the rest of your meals for the week much easier to prepare! That red velvet cake looks amazing!
I always save a portion of dinner for lunch the next day! our breakfast is genius 🙂 It looks thick like actual oats- sometimes breakfast quinoa is watery or thin when I make it. Going to try this recipe out 🙂

I can’t remember if I said Happy Birthday – Happy Birthday! lol…I don’t love cooking in bulk all of the time because I don’t like getting stuck with something I am not in the mood for. Did you like the quinoa for breakfast? I once made it and didn’t love it as much as oatmeal. Maybe I will try it again.
Answer: Yes I am, mostly for practical reasons – leftovers are very handy thing for the weeknights I you don’t have time to cook.

Cooking is so easy once you experiment. I’ve learned that a lot of things can just be thrown together and something edible will come of it 🙂
