Conserving Food

Good morning!

As you guys probably know by now, I’m pretty cheap frugal when it comes to cooking, so for dinner last night, I took what I had and mixed it together…

Mixed all my veggies together

Black beans, cauliflower, salsa and cheese

I topped the mix with garlic powder, seasoning salt, red pepper flakes, pepper, and soy sauce and made lettuce wraps.

After dinner, I made some food for the week: popcorn, chic pea cookies (a bit of a fail), and almond butter.

Homemade fruity almond butter

Homemade sweet almond butter

Ingredients (No measurements used)

  • 2 handfuls of almonds (I rinsed mine under water for a couple seconds but soaking them over night would be ideal)
  • 1 handful of cut up dates
  • Vanilla extract
  • Tiny drop of almond extract if you have it
  • Cinnamon
  • Pinch of salt
  • A few tablespoons of almond milk
  • Spoonful of coconut oil

Directions:

Mix all the ingredients in the food processor.

I let the consistency guide my measurements of each ingredient.

The dates served as the sugar and the coconut oil as the butter. This sweet almond butter would be great on sandwiches and to dip your finger in fruit and snacks in. 😉

  1. I love making meals that clean out my fridge! There are always a few odds and ends floating around.

    I have wanted to try making my own nut butter, but I’m really worried that it will kill my food processor. I totally baby it, ha!

  2. I love the combination of dates and almonds, but I’ve only had it in protein bite form and never tried to make it into a butter. Sounds like a great idea! I’m a huge fan of almond butter, with Maisie Jane’s roasted being my absolute favorite.

    The homemade almond butter sounds so good. It’s on my bucket list to try- but I’ve been feeling less-than inspired lately in the kitchen. I’ve also been doing a lot of throw together meals in the kitchen as well because I’m tired of spending so much money on groceries! Some work out well, others…not so much. Haha.

    Yes, so glad I’m not the only one posting about cheap foodie ways ;D And oh, I have yet to find a chickpea-based dessert that isn’t kinda (or really) awful. Let me know how your cookie search goes!

    I have to be honest, almond butter just doesn’t taste that fabulous to me to justify the price so I stick to Whole Foods creamy pb. Reason #28459583 I need to buy a blender or food processor of some sort 🙂

  12. Oh I have a huge jar of dates and almonds from costco, I have never seen adding dates to almond butter before. I will have to try this!

    Oooo, homemade almond butter sounds delicious! The store varieties typically have lots of sugar, so I love that you used dates–great idea!

    Those lettuce wraps look great! Mine never turn out so pretty! Also, I’ll be requesting that my roomie make me that almond butter ASAP – sounds so great!! Never would have thought about adding dates but I can imagine that turns up the sweetness, so, of course a necessity.

  20. How did the chickpea cookies turn out? I’ve made the “healthy” cookie dough dip before and I thought it was pretty good, but when my roommate tried it her reaction was “ICK you think this tastes good?!” so haha, I could be wrong!

    • Lol the chic pea baked goods aren’t for everyone. I’ve kind of started using less and less sugar with my baking so I’m starting to enjoy the simple tastes of chic pea desserts. I really like them but honey/sugar is an essential ingredient!
