Home for the Weekend

Where oh where have I been? That’s what I love about the warmer seasons- there’s so much to do and life seems to pick up and activities take the place of ennui (vocab word of the day).

I made a delicious veggie-filled pasta last week for dinner.

I got to go home and visit my parents for the long weekend.

We went out to dinner at Joe’s InnΒ on Friday and we ordered a giant Greek salad and pizza to share.

Going out to dinner is the best because I almost always have great leftovers the next day!

Being home with my parents is always a lot of fun. I kicked back, relaxed, and enjoyed lots of laughs. πŸ˜€

I also experimented with using prunes instead of dates.

I added cocoa powder, honey, and peppermint extract- a healthy take on the Thin Mint!

I love playing in the kitchen πŸ™‚ My boyfriend and I are huge fans of Blue Bell’s dessert trio ice cream (has brownie, cookie dough and chocolate covered cake chunks), but they stopped carrying it in our local Kroger!! So we attempted to make our own…with homemade vanilla ice cream, brownies and cookie dough. Ugh. Opposite of healthy, but it was delicious! And we made a relatively healthy dinner of grilled shrimp, scallops, eggplant and steamed broccoli so we felt like we were sort of doing okay πŸ™‚

  13. I’m glad you were able to enjoy the weekend with your family! Greek salads are one of my favorites, they are so refreshing. I made zucchini cookies this weekend. It was a fun healthy expiriment.

  16. Isn’t food always better when eaten with family?! Everything looks so good! Especially all those sprinkles. I made cookies this past weekend! Soooo good. Nothing beats a good old chocolate chip cookie! Expect maybe some good old chocolate chip cookie dough πŸ˜‰ Seriously, one of these days I’m going to skip the baking step and just eat the dough straight up.

    I spent the weekend at my parents’ too! Always so relaxing and a nice escape. Didn’t cook anything too exciting–but my mom made home-made cheese, too cool! (And delicious…)

  34. That yard is gorgeous!! And I love the looks of those Homemade Larabars. I use prunes in mine when I’m out of dates, and they work pretty well! Not as good as dates, but then again, dates are pretty hard to beat πŸ˜‰
