Colorful Quinoa

I loved reading all of the comments on my planning ahead and fitness posts. The blogging community is quite the inspirational group. 🙂 Now, let’s jump into Marvelous Monday.

Marvelous is a new quinoa recipe (at the bottom of this post).

My parents are always eager to let me raid their kitchen take some of their food. I made this quinoa recipe using ingredients they had in their kitchen. Easy, delicious and healthy.

Colorful Quinoa Recipe

Colorful Quinoa

1 cup quinoa

1 onion

1 garlic clove

1 squash

1 zucchini

1 head of broccoli

1 can of corn

1 can of tomatoes

2 Tablespoons olive oil

1/4 cup slice cheddar cheese

1 Tablespoon dijon mustard

Season with salt, pepper, red pepper flakes

Cook the quinoa with 2 cups of water and simmer for 10 minutes. Add Dijon mustard and cheese. Add corn and tomatoes. In a separate pot, heat olive oil, garlic and sliced onion. After 5 minutes over medium heat, add zucchini, squash and broccoli.  Add seasonings. Add the quinoa mixture, stirring over low heat for 2 minutes. Serve and enjoy!

  1. Love quinoa! I never get tired of eating salads, ground turkey, tuna. Those are in my rotation of meals every week.

    Quinoa … gotta look into that more. I like a food you can make colorful. Is there anything wrong with wanting soup and crackers every night of the week? If not, I’m okay.

    I basically eat the same meals all week long. I eat a whole variety of desserts though 😉

    Thanks for the quinoa recipe- I love trying quinoa in different ways.
    I eat the same things over and over again and never get sick of them. For example, I have a yogurt bowl every single day with Chobani, berries, granola, and nut butter. Never gets old!

  14. Seeing as I’m a big fan of food “grooves,” I definitely don’t mind eating the same thing over and over again. If it’s delicious and I don’t have to think about it too hard? I’m all for it 😀 That being said, I almost never get sick of any type of breakfast food… Cereal, oatmeal, yogurt, pancakes. Love.them.all.

  17. This quinoa salad sounds so good! I love using farm fresh veggies and making healthy meals. I’m a huge fan of leftovers and having healthy foods on hand.

  18. I have been known to eat the same thing for a week straight. I am a creature of habit- and I’m lazy.. Oftentimes I just don’t feel like thinking up something else to cook! 🙂 I am definitely like that with quinoa because one small change makes it a new recipe!

  19. I haven’t made a cck recipe in a while, but they’re soooo good! I made her deep dish chocolate chip cookie once, and it was fantastic.
    I love eating the same meal over and over if it’s one I like! I love making huge batches of grain/bean salads (like your quinoa!) and having them as leftovers for at least an entire week. I think the flavors get even better when they get a chance to sit for a bit! 🙂

    Yum! I love quinoa and I love making a big batch, so I can eat for the week. I just thinking cooking one big meal makes eating healthy easier and less tempting to eat junk 😀
