Making Chips and Weekend Eats

Hope everyone had a great weekend! I was lucky to enjoy a day off today in honor of President’s Day. 🙂

On Friday, my friends and I made a trip to DC to celebrate our best friend’s birthday. The next day we went to brunch at this quaint little cafe in the city and I got a tasty egg, spinach, feta on a croisant. So good!

We got back from DC on Saturday and I decided to cook dinner for me and my friend instead of go out to dinner. I used a base of gnocci pasta and added canned tomatos and frozen broccoli with parmezan cheese, garlic and olive oil.

On Sunday afternoon, I decided to throw together a random assortment of foods to have for lunch. Pineapple, kiwi, plantain chips with peanut butter, wasabi peas (does anyone like these besides me?), and chips with humus.

I didn’t have any crackers or chips so I decided to make some of my own. Tortillas can serve as the perfect chip.


Preheat the oven to 350 and cook for 10 minutes


Enjoy with hummus or solo!

Shortly after our smorgasbord, we went for a long walk to get a little workout in for the weekend. That evening, we went to dinner at Mono Loco.

Thursday Thursday!

On Tuesday, we went to Mas to celebrate our anniversary. Mas is one of the few Spanish tapas (small dishes) restaurants in the area and it’s quite tasty. We wasted no time and began drooling over the menu, picking out tons of creative dishes.


The food was delicious. My favorites were the salad, the artichoke dip, and the octopus. Lee and I both agreed that we ate a little too much but with all the tasty plates, it’s hard to resist.

My new dress is from Urban Outfitters, cardigan from Splendid, and my booties are from Rack Room- go figure! Lee rocked the fresh from work look and looked quite dapper if I do say so myself.

Since we had such a delectable night out, I got up the next morning to hit the gym. I jumped back on the same treadmill from the day before, hoping to get some inspiration to complete the beast. Later in the evening, I did some yoga videos with my roommate on our DVD player.


After getting our zen on, I called it a night and did a little reading before falling asleep.

This morning, I woke up and headed to the gym for some treadmill incline walking. I woke up at 5:30 AM which I think might be the magic hour to wake up if I want to workout. After the gym, I had extra time (a first!) and enjoyed a few Lara Balls over some reading.

Weekend Eats!

Hope everyone had a great weekend. Mine was full of delicious food. On Friday evening, Lee and I went to our favorite little restaurant, Vinny’s, for dinner. He got here a little after 7:00 and we were both starving. We started our meal with spinach artichoke dip as an appetizer so we wouldn’t be grouchy to each other.

We decided to order a cesar salad and pizza to share. This is big because this was the very first meal that Lee has ever split with me. I’m big into splitting meals, so this made me a happy camper.

Dinner was delicious. Since we had so much good food, we decided to forgo dessert. I know, super lame. I realized the next day that I hadn’t had any desserts or sweets for an entire day! I think that is literally a first for me. Sad but true!

The next morning, I made us eggs and turkey bacon for breakfast.

After letting our food digest, we hit the gym for a little cardio. When we first walked into my little gym, almost all of the machines were taken so we went upstairs to the club house area and played a little ping pong, pool, and foozeball. It was fun and I was down to count it as my workout but seeing as we were already in our workout clothes, we figured we might as well head downstairs for a real workout!

Later, we got ready for our dinner reservation in honor of Charlottesville’s restaurant week. We had a reservation at Da Luca Bistro and it was wonderful. I ordered an italian soda mixed drink and I was a big fan.

By the way, I really liked everyone’s comments about drinks and social activities. I found that skipping out on Friday drinks made me enjoy Saturday’s festivities even more and more guilt-free. 😀

Anyways, back to the fun stuff. We got a 4-course meal full of flava’. Here were my foods:

I think everyone enjoyed their meal and had a great time!

On Sunday, Lee and I hit up the Cav Diner for breakfast. I got the chocolate chip pancakes and they were alright but nothing compared to the cakes my parents make.

After Lee left, I got a workout in, showered, and enjoyed a new snack before dinner.

Enjoying the Day

Who’s excited it’s Friday? Me! It’s restaurant week in the city I live in and so I’ll be sampling some delicious foods at some local restaurants. Speaking of fancy food, 😉 I whipped up a salad last night for dinner that was full of flavor.

I used my salsa salad dressing trick over a bed of butter leaves, grape tomatoes, goat cheese, and beats.

My evening started off so healthy but we had some friends over and a little bit of this went down.



In the past, especially in college, I would sometimes skip out on social events because I didn’t want all of the alcohol calories. I went a little to the extreme and often missed out on some fun times because I was more worried about maintaing my weight. Well I’ve finally found a balance of being social and not worrying about a few caloric drinks because as long as it’s not happening all the time, I can indulge every once in a while. Moderation is my friend. 😀
