A Jeffersonian Recipe

Since it’s What I Ate Wednesday, here’s a quick and healthy recipe that’s perfect to take to a pot luck dinner like the Jeffersonian Dinner I attended last night.

I brought roasted broccoli as my dish.

I got the recipe here from Simply Scratch.

Preheat your oven toΒ 500 and bake the broccoli in olive oil, salt and pepper for 10 minutes. Add parmesan cheese and you’re good to go.

A Recipe and Discovery

Happy hump day friends!

Here’s an easy recipe that I’ve been having for dinner all week.

Vegetable Fried Quinoa

  • 1 cup quinoa
  • 1 onion
  • 2 cups carrots
  • 2 cups broccoli
  • 3 eggs
  • Season with garlic salt, pepper, sriracha, soy sauce

Bring 1 cup quinoa and 2 cups water to a boil. Lower heat and simmer until quinoa is fluffy. Cook onions, carrots and broccoli all separately until hot and add to quinoa. Add 3 eggs. Add seasonings.

I started my day off with an early morning exercise class in my new pumped up kicks that I ordered online (so much cheaper).

Coconut Craisin Oatmeal

I have to tell you, I don’t see value in making New Year’s resolutions. If a change needs to be made, I prefer to make it when it’s needed.

But don’t worry, I still believe in a big NYE celebration.

I do, however, view each day as a fresh start for new resolutions, like an early morning workout and a big bowl of oats.

Coconut Craisin Oatmeal

  • 1/2 cup oats
  • 1 cup water
  • 2 Tablespoons sweetened coconut
  • 2 Tablespoons Craisins
  • 1 Tablespoon Agave Nectar (or any sweetener)

Add oats, coconut and craisins to a bowl. Bring 1/2 cup water to a boil and pour into the bowl. Add Agave. Stir, serve and enjoy. πŸ™‚

I have to admit, I had a big piece of chocolate cake on New Year’s Day.


The next day, I went rock climbing with a friend so that balances it out, right? πŸ˜‰

Pumpkin Smoothie for Breakfast

After a sweaty workout this morning, I was in the mood for a breakfast smoothie.

I’ve seen several great pumpkin smoothie recipes lately. Here’s one that I whipped up:

Pumpkin Smoothie

  • 1/2 cup pumpkin puree
  • 1/3 cup ice
  • 1 Tbsp ground flax
  • 1/2 scoop vanilla protein powder
  • 2/3 cup soy milk
  • 1 Tbsp honey
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

Add all ingredients to blender and blend for 1 minute. Pour, top with cinnamon, and enjoy!

Question: Pumpkin pie or pumpkin ice cream?

I say both!
